Peach Paradise


So..... one thing that I love in summer is peaches. And, thanks to The Peach Truck, some of the most delicious are now available in Nashville.  I cut them open, grill them and top with a swirl of caramel, dash of salt and a scoop of ice cream for dessert; or slice them over a spinach salad. But this weekend, I put them to the BEST use. Cocktails poolside were amazing thanks to my blender, a little experimenting and of course, this source for one of the season's treasures-- Georgia peaches.

I fell in love with The Peach Truck and started following them on Twitter (@ThePeachTruck) last summer to check their arrival and delivery schedule. They have the very best and are in Nashville often, so if you don't know about them, get on board and follow so you will have plenty to make concoctions like this one:

PEACH MARGARITAS

4-5 fresh, ripe peaches cored and loosely diced (leave peels on)
5 fresh basil leaves
1 cup of Avion tequila
1/4 cup Triple Sec
2 single-serve packets Truvia (Stevia) sweetener
2 TBSP Grand Marnier
2 cups ice


Place the peaches, basil and tequila in blender and puree. Add the Triple Sec, Grand Marnier, sweeter, blend on mix for 30 seconds. Add the ice and liquify. The result-- a sweet (but not too much) treat with a serious kick!  (makes 4 servings.)
