A New Mojito.

Generally, mojitos are a muddling of mint, rum and lime.  But while experimenting on a day off, I discovered a blend that might be my favorite to date. I've had mojitos with all types of flavors by the top bartenders in the country. My Pinterest page is full of inventive blends. But, this one might just be the best sip yet... 


CANTALOUPE STRAWBERRY MOJITO

3/4 cup cantaloupe/strawberry mixture*
3 oz white rum
8-10 mint leaves, torn into pieces
2 Tbsp agave nectar or raw honey
Sparkling Water
The juice from one lemon or lime

(these directions seem complicated, but they aren't. I'm just offering lots of info)
*Start by finding super-ripe strawberries (1 qt.) and whole melon (Check out the Produce Place or the Nashville Farmer's Market for the best local fruit). Trim rinds/stems, cut into 1/2" pieces. Put into an airtight container or zip-bag along with 1/4 cup of pineapple juice and a splash of fresh orange juice. Shake a bit to coat, and let sit overnight (or up to four days).

 Remove 3/4 cup fruit mix from the container when you're ready to blend cocktails. Put equal parts into the bottoms of two 12oz glasses. Divide the mint leaves and the lemon juice in each glass and muddle well. Add the agave nectar (again, equal parts) and muddle a bit more.  Add rum (divided).Cover the mixture with cubed ice. Top with sparkling water, stir well and garnish with a mint sprig and a strawberry half.

This drink is summer in a glass. And, the leftover fruit isn't just for refills. Use it with light vanilla almond or coconut milk, protein powder and ice for a breakfast smoothie.
